There are few things that make me happier than the words “healthy” and “dessert.” Unfortunately, these two aren’t necessarily BFFs. But lucky for me, my grandma* knows how to force the friendship between the two, and the result is pure genius. Whether it’s her famous fruit salad or her breadcrumb-tendered chicken, Grandma sure knows how to make me smile in the kitchen! My favorite recipe of hers? Her Sugar- Free, No- Bake Key Lime Pie.
Yesterday I woke up with an insane craving for something sweet and tart, but not too extreme. I had a day off and I wanted something fruity. Something fluffy. But ugh- not something that would make me feel guilty (#modelproblems). With my grandma’s famous key lime pie popping to mind, did I dare try to recreate?? I texted her for the exact recipe and to my delight, she was just about to make the pie for my Papa right then (because she’s cute like that and makes pies just for the heck of it)! She sent me a full video of her measuring and mixing the simple ingredients. How long was the video you ask? 4:18. Yep- a pie that takes just 4 minutes to make. You’re welcome.
Grandma’s Sugar- Free, No- Bake Key Lime Pie
Prep Time: 4 minutes | Sit in Fridge Time: 5 hours minimum
9″ Graham cracker pie crust
1 tub low-fat whipped topping
1 Yoplait light Key Lime Pie flavor
1 fresh lime
Philadelphia’s 1/3 less fat cream cheese
1 mixing bowl and 1 electric beater
Take cream cheese out of fridge for a few minutes to soften. Once softened, dump entire package into bowl. Follow with yogurt, 1 tablespoon fresh lime juice, 1/3 cup Truvia. Beat ingredients to mix it all together. Then, add the entire whipped topping to the bowl and continue to beat until completely smooth and fluffy. Once beaten, pour into pie crust tin and smooth across evenly. Cover with provided plastic lid and place pie in fridge to cool/ set before treating yourself after dinner! Oh, and don’t forget to lick the batter before cleaning up 😉
