Pumpkin Pie Oatmeal

I don’t know about you guys, but pumpkin has me feelin’ some typuh way. Everywhere I turn, I’m tempted with pumpkin scented candles, seasonally spiced lattes, and the sweet aroma of fresh fall desserts. Call me basic, call me whatever you’d like, but I know I’m not the only one who wants to indulge, while also avoiding the dreaded “winter coat” if you know what I mean.

Here is the first of many recipes I’ll be posting this fall to make sure y’all get your fix without your physique having to pay the price!

PUMPKIN PIE OATMEAL

Try this warm and cozy snack as a festive power breakfast or an afternoon snack to kick your pumpkin craving to the curb!

Ingredients:
2 cups oats
1+1/4 cups almond milk
3/4 cup organic canned pumpkin
1 tbsp light brown sugar (optional. I didn’t use this and it was definitely sweet enough)!
1 tsp pumpkin pie spice
Fat free Cool Whip topping
Optional: butterscotch chips, white chocolate chips

“Cook” (aka heat up): Put all ingredients in a microwave safe bowl, sans toppings. Stir together, and toss in microwave to heat on high for 2 mins. Give it a quick second to rest, then top and serve hot for a scrumptious, healthy take on pumpkin pie!
